Harvesting Process

Our experienced maestro tequilero carefully chooses only the best 7-year-old blue weber agaves for production. This ensures that the heart of the agave, the piña, is ripe and succulent, making it ideal for crafting high-quality tequila.

Autoclave Oven

Once the agave hearts are harvested, they are cooked in traditional autoclave ovens for 8 hours and then allowed to rest for an additional 4 hours. This slow-cooking process softens the piñas, allowing the natural sugars to develop fully. After resting, the piñas are ground to extract the precious agave juice.

Fermentation

The extracted agave juice undergoes fermentation for 72 hours. During this time, a special strain of yeast is introduced, which converts the sugars into alcohol. The result is a fresh, vibrant tequila base ready for the next step in its transformation.

Distillation

The fermented juice is distilled twice in copper alembics, an ancient method used for the ultimate refinement of spirits. Copper alembics are known for producing a pure, clean distillate. Filtration
